Olio nuovo: the first oil out of the mill in early October, bottled unfiltered while it is still cloudy and fierce. It is for drizzling, not frying: over bread, beans, grilled vegetables and a good steak.
It is at its best in the first six months, so we make little of it and ship it as soon as it lands in Texas.
